It’s that time of year again, though I’m a bit strapped for time having been away for the past two weeks and now finding myself trying to cram in a few put-away projects before the week ends.
Today I processed 40lbs of tomatoes into a batch of pasta and a few jars of tomato chunks. The only waste was the tops of the tomatoes; all the skins and seeds are dehydrating and I’ll pulverize the dried material into tomato powder for use in all sorts of dishes later on.
I also roasted a dozen cobs of corn and stripped the kernels before simmering the cobs with some onions, a few bay leaves, some peppercorns, and a bit of thyme and parsley….then that was strained and pressure canned for winter soups. I was going to just freeze the kernels but ended up canning them as well and processing the jars together with the corn stock.
